Blanching will help to retain the nutrients and bright color of the greens when cooked.

  1. Bring water and sugar (2 cups water to 1 tsp sugar) to a boil.
  2. Add the greens and cook them for about 10 seconds.
  3. Drain and pour cold water over them immediately. This will stop them cooking further.
  4. Use the greens as required in recipes.
